What to do with all the veggies in the fridge?
Just grill them in the oven or in a grill skillet with a little oil and lots of seasoning, until tender.
Toast a pita pocket and stuff it full of the warm veggies. Too dry? Try adding some tzatziki.
1 cucumber, peeled
1 cup (250 gr) soy yogurt
1 t cashew butter
½ to 1t salt and pepper
1 t lemon juice
1 t white vinegar
2 cloves of garlic, finely chopped
1 T dill
Cut the peeled cucumber lengthwise in two, then remove the seeds and grate it. Add ½ t salt to the cucumber. After 10 min wring to remove excess liquid from cucumber. Mix the rest of the ingredients. Gently fold the grated cucumber into the yogurt sauce.
